Puglisi, has opened an organic Italian restaurant serving pizza slices with such ingredients as Hindsholm sausage and kale or
Lolin anchovies and onions. Using a blend of fresh-milled local and
imported Italian flour for
the dough, Baest cures the charcuterie in-house from pigs sourced from
the picturesque dairy town of Hindsholm, about two hours outside
Copenhagen.
